Чизкейк "Нью-Йорк"

ИНГРЕДИЕНТЫ:
На форму диаметром 24см

Для песочной основы:
песочное печенье 200 г
сливочное масло 110 г

Для крема:
сливочный сыр "филадельфия" 750 г
сахар 210 г
ванильный сахар 10 г
яйца 3 шт
сливки (33-35% жирности) 180 мл
цедра лимона (по вкусу) 1 ч.л.

ПРИГОТОВЛЕНИЕ:

1.Приготовить песочную основу.
Печенье крупно наломать и сложить в чашу блендера.И измельчить в блендере в мелкую крошку.
2.Сливочное масло растопить.
Влить масло в миску с песочными крошками.
Хорошо перемешать массу.
3.Выложить крошки в разъемную форму.И довольно плотно утрамбовать ложкой или дном стакана.
4.Выпекать песочную основу ~10 минут в нагретой до ~180°C духовке, затем вынуть и остудить.
5.Чизкейк будет выпекаться на водяной бане, поэтому нужно обернуть форму 2-3 слоями фольги, чтобы вода не попала во время выпечки в форму с чизкейком.
6.Приготовить крем:
Лимон вымыть, насухо вытереть и снять с него цедру при помощи терки или специального приспособления для снятия цедры.
7.Сахар вместе с ванильным сахаром измельчить в кофемолке в пудру.
Сливочный сыр выложить в большую миску, добавить сахарную пудру и перемешать массу ложкой.Затем слегка взбить миксером на минимальной(!) скорости - буквально, чтобы масса только смешалась и стала однородной.
8.По одному, добавить 3 яйца, каждый раз хорошо размешивая массу венчиком.
9.Добавить лимонную цедру (по желанию) и перемешать.Влить сливки и еще раз перемешать массу венчиком.Должен получиться гладкий, однородный крем.
10.Получившийся крем вылить в форму с песочной основой.Поверхность разровнять лопаткой.
11.Заранее нагреть духовку до ~160-170°C и выпекать чизкейк на водяной бане.
Поставить форму с чизкейком в глубокий противень (или глубокую форму), в которую налить кипяток.
Вода в противне должна доходить примерно до середины формы с чизкейком.
12.Выпекать чизкейк ~60-80 минут.
У готового чизкейка, при потряхивании формы, серединка должна слегка дрожать.
При остывании, чизкейк "дойдет до готовности" и серединка станет упругой.
Готовый чизкейк оставить в выключенной духовке (с приоткрытой дверцей) примерно на час.
13.Форму, с остывшим чизкейком, затянуть пищевой пленкой и убрать в холодильник на ночь.
14.На следующий день снять с формы пищевую пленку и аккуратно провести маленьким ножом, смоченным в воде, вдоль бортика формы, отделяя чизкейк от стенок формы.Снять кольцо разъемной формы.
Чизкейк аккуратно переставить на сервировочное блюдо при помощи двух длинных лопаток
Нарезать чизкейк острым ножом, смоченным в воде.
